One way to determine whether or not your countertops need sealant is to add several drops of water on top of the granite, in several locations. Let it sit for 30 minutes. If the water has penetrated the surface within and has darkened the granite, it is time to reseal. Other indicators include dull places on otherwise glossy countertops.
